Honey production has been in the Charles family since 1955. Rueben Charles established the family business after inheriting it from his father Bernard who kept bees as a hobby. Rueben was a bushman who sourced his own honey from the bush. Production grew gradually from a hobby to a business with 1600 hives. He and his wife Beryl expanded Blue Hills Honey into a thriving bulk honey producer. Blue Hills Honey was the first honey business in Australia to export to Japan in the 1960s.

Rueben's son Robbie began managing the business in the mid-1990s diversifying the business further with his wife Nicola to incorporate not only its bulk export capacity but establishing a packaging facility for retail and export markets. Although a broad range of honey is produced Blue Hills specialises in Leatherwood Honey one of the world's finest and most distinctive honeys.

Blue Hills' process of cold extraction assures that all the natural components of the honey are retained. The product is delivered to you as nature intended, direct from the comb. The temperature is strictly monitored in the extraction process to be less than 45 degrees C. Heat interferes with the makeup of honey and can alter taste and colour. Due to this natural way of extracting, the honey will candy (granulate) quicker than heat treated honey. This is a natural process and does not alter the honey in any way. Honey does not "go off." To re-liquiefy, place the container in a pan of warm (not hot) water till honey becomes runny again.
